Beer is the world's most widely consumed and probably the oldest of alcoholic beverages; it is the third most popular drink overall, after water and tea. It is produced by the brewing and fermentation of starches, mainly derived from cereal grains—most commonly malted barley, although wheat, maize (corn), and rice are widely used. Most beer is flavoured with hops, which add bitterness and act as a natural preservative, though other flavourings such as herbs or fruit may occasionally be included.

Some of humanity's earliest known writings refer to the production and distribution of beer: the Code of Hammurabi included laws regulating beer and beer parlours, and "The Hymn to Ninkasi", a prayer to the Mesopotamian goddess of beer, served as both a prayer and as a method of remembering the recipe for beer in a culture with few literate people. Today, the brewing industry is a global business, consisting of several dominant multinational companies and many thousands of smaller producers ranging from brewpubs to regional breweries.

The term was originated in U.S and then passed to Canada and New Zealand. It is also often used to refer to the products of small breweries, brewpubs, and some all-malt beers produced by larger breweries. Most craft brews are unfiltered, bottle conditioned or cask conditioned. They usually have smaller amount of adjuncts than mass-produced beers, but there are exceptions.

In United Kingdom, CAMRA uses the phrase "real ale" to refer to unfiltered and unpasteurized beers that are not force-carbonated, like cask ale. In the United State, cask ales are uncommon, and craft brews on draft are primarily served from pressurized kegs, despite the fact that American bottle conditioned beers are real ales.

When James Robertson published the Great American Beer Book in 1974 and the The World Guide to Beer book by Michael Jackson in 1977, the interest of Americans in beer styles has increased progressively. Another thing that improves the popularity of this trend is when the legality of home brewing was clarified because of the laws that were enacted in 1979. Pioneer breweries brought the concept of craft brews to a larger amount of audience and build the foundation which the current market is based. There were in fact, a number of products from larger American brewers which would definitely qualify today as "craft" beers.
